Wild Sweets took the top prize for
"Best Book In The World" on matching food & Wine at the 2004 Gourmand World Cookbook Awards, Barcelona. And when you break it open you will probably wonder why it didn't get the pastry cookbook award too? Wild Sweets bursts into life with its first page, featuring the expected and unexpected elements of pastry.
Dominique and Cindy Duby are world-acclaimed pātissiers and
chocolatiers who trained under master chefs such as Lenōtre
in Paris and Wittamer in Brussels. Their style incorporates
traditional dessert ingredients; fruits, chocolate, nuts and
grains with the untraditional; chicory, fennel, tomatoes,
squash and eggplant (to name but a few). Each paired with
a delicate hand, a masterful touch of sensibility and a glass
of wine. Their desserts will prove as much of an adventure
to the (re)creator as to the consumer.
Woven in amongst the recipes you will find chapters dedicated
to techniques; creaming, churning, caramelizing and finishing
touches. With many of these aspects brought to life with fantastic
food and location photograph.
Wild Sweets is available thru Amazon.com but better still
the avid book collector can pick up a signed copy by purchasing
the book thru their web site http://www.dcduby.com/boutique/boutique.php
and whilst you'r ther you can score a pound of their hand
made chocolates too.
