This is a variation of the classic “Dark & Stormy” cocktail, with the light and bubbly kiss of champagne. A great cocktail to serve on board ships or boats, as ginger helps to combat seasickness.

2 to 3 pieces of fresh shaved ginger (or ˝ ounce ginger juice)
4 lime quarters
5 to 7 mint leaves
1 ounce simple syrup
1 ˝ ounces of light rum
Champagne (Brut)

Simple Syrup
˝ cup sugar
˝ cup hot water
This simple mixture of sugar and water in equal parts is a base ingredient for many cocktails. Make some in advance; it can be stored in your refrigerator for weeks.

Stormy Ginger Fizz
In a cocktail glass, muddle the fresh ginger with the lime quarters, mint leaves and simple syrup. (Use a muddler or a back of a spoon. Add the rum and ice and shake vigorously. Pour into a champagne highball glass and top off with a brut champagne. Serve with a straw.
In a small bowl, glass or empty, clean wine bottle combine the sugar with the hot water and stir, or shake bottle, until sugar is completely dissolved. Let cool completely before using.
