Edelweiss Stuffed Pork ChopIngredients 2 french cut pork chops 2 TBSP butter 1 medium tart apple, peeled and diced 1 celery stalk, diced ½ small onion, chopped ¼ cup walnuts, chopped 2 slices of dried bread, cubed ½ cup chicken stock 4 slices Wisconsin cheddar cheese Salt & pepper, to taste

Method Preheat the oven to 450 degrees. Sautee onion in butter for about 1 minute. Add apple, celery, walnuts and chicken stock and let simmer for 5 minutes. Set aside to cool. Stand the pork chops upright and make an incision through the middle of each (to hold the stuffing). Add the cooled mixture to the dried bread cubes and toss, thoroughly mixing. Divide and scoop the mixture into each pork chop. Season the chops with salt and pepper. Broil chops 3 minutes on each side, then place in the preheated oven and bake for 10 minutes. Remove from oven & place 2 pieces of cheddar cheese on each chop, and place under broiler for about a minute or until cheese has melted.
