Chicken, Peach & Feta Salad with Spinach & Spiced Corn Relish

Ingredients

Serves Four
4x 5oz Cooked Chicken Breast
2 Whole Peaches
2 Cups Raw Corn Kernels
2 Cups Chopped Sweet Onion
6oz (8 packed cups) Baby Spinach
4tbs Crumbled Feta Cheese
2tbs Chopped Chives

Dressing
2 Limes
2tsp Sambal
2tbs Olive Oil
1tsp Mustard
1tsp Agave (can sub honey)
Salt
Pepper

Equipment
Mixing Bowl
4oz container with tight fitting lid

Method
Dice the peach and shred the chicken, place both in a large mixing bowl, add the spinach and crumbled feta.

Heat a skillet over a medium heat, sautee the chopped onion & corn, once it is cooked, turn off the heat, add the 2tsp of sambal, zest and the juice of one lime.

Squeeze the juice of the remaining lime into a the 4oz container, add the olive oil, mustard, agave and a pinch of salt and pepper. Attach the lid and shake vigorously to emulsify.

Add the corn-onion mix to the salad, toss with the dressing and serve on a platter or four bowls...
